Lamb Shish Kebab

Ingredients

1 1/2 pounds boneless lamb leg cut into 1-inch cubes
1/2 pound smoky whole slab bacon, cut into 1-inch squares
2 tablespoons cilantro (optional)
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon black pepper
2 large fresh cloves garlic, smashed
1/4 cup extra virgin olive oil
8 mushrooms, whole button
2 medium onions, quartered
1 green pepper, cut into 1-inch squares
1 red pepper, cut into 1-inch squares
1 yellow pepper, cut into 1-inch squares

Instructions

Mix seasonings with olive oil and make into paste. Rub paste on lamb cubes. Thread the ingredients on skewers, alternating the lamb and bacon with the onion and peppers, starting and ending with a mushroom. Grill directly over medium-hot coals for 8 to 12 minutes, until the meat reaches 160°F for medium. Lamb should be set aside for a few minutes before serving.
