1/4 teaspoon black pepper
1 batch tzatziki (recipe to follow)
1 tablespoon red wine vinegar
3/4 teaspoon kosher salt
1 pound ground lamb
4 cloves garlic, minced
8-12 fresh tomato slices
1 teaspoon fresh rosemary, chopped
1/2 teaspoon dried oregano
1 1/2 teaspoon dried onion flakes
1 tablespoon dijon or coarse grain mustard
4 whole wheat pita pockets
Combine all ingredients except Tzatziki and pita pockets in a medium bowl. Shape into patties and grill over medium heat for 5-7 minutes per side or until the burgers are thoroughly cooked. Allow to stand for about 5 minutes.
Spread each pita with 1 1/2 ounces Tzatziki and add a few slices of tomato. Add the cooked burgers and fold the pita over and eat like a taco.
1 6-oz. container fat free, plain Greek yogurt
1/4 large cucumber, thinly sliced
1/2 tsp. dried dill weed
1-2 chopped green onions
Salt and pepper to taste
1 cloves garlic, pressed
Combine all ingredients and chill in refrigerator until ready to use.
