1 pound ground lamb
1/2 cup walnuts, finely chopped
1/3 cup feta cheese, crumbled
1 tablespoon mint, chopped
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
fresh ground black pepper
6 whole wheat burger rolls
fresh lettuce leaves, tomato slices, coleslaw optional
Preheat the grill to medium. Gently combine the lamb, walnuts, feta, mint, salt, cinnamon, and pepper in a large bowl. Divide the mixture and shape into 6 patties, each about 4 inches in diameter. Place the patties on the grill and cook until no longer pink inside and an instant-read thermometer registers at least 160 degrees, about 5 minutes per side. Serve on the burger buns with lettuce, tomatoes, and coleslaw as desired. Also serve with with Cucumber Mint Topping as desired.
1 medium cucumber
1/2 cup plain Greek yogurt
1/2 tablespoon chopped mint
Salt and freshly ground black pepper
Peel the cucumber, slice in half lengthwise, and remove seeds with a spoon. Cut into thin half-moon slices. In a bowl, combine the cucumber, yogurt, mint, and salt and pepper to taste.
