Lamb Pizza (Kid–Friendly Version)

Ingredients

1 package pre-made whole grain pizza dough (about 1 pound)
11/2 tablespoons olive oil
1 pound ground lamb
1 medium shallot, chopped
2 garlic cloves, minced
1 tablespoon tomato paste
1 tablespoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup prepared pizza sauce
2 roma tomatoes
3/4 cup shredded mozzarella cheese
1/4 cup fresh basil leaves, thinly sliced

Instructions

Heat oven to 450 degrees. Brush baking sheet with 1 teaspoon olive oil; using your hands spread dough over entire length of baking pan, pushing dough to edge (or roll out dough on floured surface and transfer to pan). Bake pizza dough for 5 minutes. Remove from oven and set aside.

Over medium heat 1 tablespoon oil in large non-stick skillet. Add lamb, shallot, garlic, tomato paste, oregano, 1/8 teaspoon salt and 1/8 teaspoon pepper, cook until lamb is completely browned and about 5 minutes. Remove from heat.

Top pizza with 1/4 cup prepared pizza sauce. Evenly distribute cooked lamb, sliced tomatoes and top with mozzarella cheese. Bake for about 15 minutes, until cheese is bubbly and edges of crust are golden brown. Remove from oven and top with shredded basil.
